4 Ingredient Chocolate Chip Pancakes

You can use as many or as few chocolate chips as you’d like, but I always err on the side of “the more, the merrier!” Especially when it comes to chocolate.

Ingredients

2 large eggs
1/2 cup very ripe well-mashed banana (about 1 medium banana)
1/8 tsp baking powder
1/4 cup chocolate chips plus more for adding to pancakes

Instructions

In a medium bowl, beat the eggs lightly. Mix in the mashed banana and baking powder until well combined.

Heat a nonstick skillet or griddle over medium heat. Spray with nonstick cooking spray.

For each pancake, pour about 1/4 cup of the batter onto the hot surface. Sprinkle some chocolate chips over the top of each pancake.

Cook for 2-3 minutes per side, flipping when the edges look dry and the bottom is lightly golden.

Serve the pancakes warm, topped with more chocolate chips, butter, maple syrup, or your favorite toppings.

Notes

Go as light or heavy on the chocolate chips as you’d like!
For thinner pancakes, add a splash of milk to the batter.
Make it vegan by using 2 mashed ripe bananas instead of the eggs.
