INGREDIENTS
- 1 tbsp olive or avocado oil
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp ground cumin
- 1/2 tsp paprika
- 1/4 tsp chilli powder
- 1/2 tsp sea salt
- 5 c cauliflower florets, cut into ½” slices
- 1/3 c refried beans
- 3/4 c shredded Mexican cheddar cheese
- 1 jalapeno, sliced
- 1/2 c chopped grape/cherry tomatoes
- 1/4 c diced red onion
- 1/4 c chopped fresh cilantro
- 1 avocado, sliced or chopped (optional)
INSTRUCTIONS
Step 1: Prepare the oven. Preheat it to 425 degrees F.
Step 2: Use olive oil or avocado oil cooking spray to grease a large baking sheet.
Step 3: Into half inches pieces, slice the cauliflower.
Step 4: Combine the oil with garlic powder, onion powder, cumin, paprika, chilli powder, and sea salt in a large bowl. Add in the sliced cauliflower. Toss gently until coated.
Step 5: Onto the prepared baking sheet, transfer the seasoned cauliflower. Make sure they have enough space from each other so they roast nicely. Bake for about 20 minutes or until the cauliflower is tender and begins to brown.
Step 6: Take the pan out of the oven. In the centre of the pan, push the cauliflower together. Top with refried bean, sprinkle with cheese, and top with jalapeno slices. Place back to the oven and bake further for 6 to 7 minutes until the beans are heated through and the cheese has melted.
Step 7: When done, remove from the oven. Top with chopped tomato, red onion, and cilantro. If using, add avocado and directly serve from the sheet pan or transfer to a platter or in bowls.
