INGREDIENTS
1 lb ground beef lean
Taco seasoning 1 Pack
Vegetable oil as required
8 taco size flour tortillas
1 can (15 oz.) of refried beans
1 (10 oz) can of red enchilada sauce
2 cups Mexican cheese mix shredded
TOPPING:
Tomatoes, diced
Sliced green onion
INSTRUCTIONS
Pre-heat oven to 400°F. Line a baking sheet using parchment paper.
Brown the ground beef in a large skillet on medium heat. Break it up during cooking. After the meat is cooked, drain any excess grease and add 1 cup of water to the skillet.
Bring to boil. Reduce heat and simmer until liquid is almost gone.
Heat 2 tablespoons vegetable oil in a separate skillet on medium heat. Flip tortillas as you go, until they are crispy and golden brown. This should take between 3-4 minutes. You can add more oil if necessary and leave the browned tortillas alone.
Refried beans can be heated in the microwave or on the stovetop to make them more spreadable. Spread the refried beans onto 4 tortillas and then add ground beef.
Cover the remaining tortillas with a layer of cheese, and then top each one off with 2 tablespoons of enchilada. Sprinkle 1/2 cup cheese on top
Bake for 8-10 minutes on a baking sheet.
Serve with green onions and tomatoes.

I decided to find out for myself and ordered both the original and the copycat versions of the Mexican Pizza from Taco Bell. Here’s what I thought: The original Taco Bell Mexican Pizza is a lot like a regular cheese pizza, but with a few Mexican-inspired toppings. The crust is thin and crispy, and the cheese is melted and gooey. The toppings include diced tomatoes, green onions, and jalapeño peppers. The copycat Taco Bell Mexican Pizza is very similar to the original, but there are some noticeable differences. The crust is thicker and doughier, and the cheese is not as melted or gooey. The toppings are also different; instead of diced tomatoes, green onions, and jalapeño peppers, you get ground beef, refried beans, and shredded lettuce. CONCLUSION: Overall, we thought the copycat Taco Bell Mexican Pizza was WAY better than the original. The flavors were more intense and the overall texture was much better. We will definitely be making this again!
