Loaded Sliced Baked Potatoes


3 large russet potatoes washed and dried
1 tablespoon vegetable canola or olive oil
Salt and pepper
2 cups shredded cheddar cheese
6 slices bacon cooked crispy and crumbled
1 tablespoon Italian herb seasoning
2 green onions diced


Preheat the oven to 375°F.
Slice the potatoes into 3⁄4-inch thick rounds.
Place the potato slices on a baking sheet in a single layer. Brush both sides lightly with oil and season with salt and pepper.
Bake for 25 minutes, until lightly browned.
Remove from oven and brush potato slices with bacon drippings. Return to oven and bake 10 minutes more.
Remove from oven and top potatoes evenly with cheddar cheese and crumbled bacon.
Bake for 5 more minutes, until cheese is melted.
Remove from oven, sprinkle with Italian herb seasoning and green onions.
Serve immediately with sour cream for dipping.
