1½ pounds ground beef
1 large egg
1 grated onion
½ cup chopped flat-leaf parsley
½ cup bread crumbs
½ cup grated Parmesan
¼ cup tomato paste; season with salt and pepper.
On a foil-lined baking sheet, form the mixture into an 8-inch loaf. Bake at 400° F until cooked through, 40 to 50 minutes.
