Slow Cooker Casserole

Introducing “Fridge Clearing Feast Casserole” Slow Cooker Casserole – a versatile and delicious dish that brings together an assortment of ingredients to create a comforting and hearty meal. This casserole gets its name from the concept of using whatever ingredients you have on hand, much like cleaning out your fridge. It is a perfect way to utilize leftover vegetables, protein, and grains, resulting in a meal that is both budget-friendly and incredibly flavorful. With this recipe, you’ll never need to ask “What’s for dinner?” again!

Ingredients:

1.5 pounds ground protein (we used beef but you can sub with your fave)
1 sliced onion
4 diced or sliced potatoes
2 cups chopped carrots
1 cup chopped celery
3 cloves minced garlic
1 teaspoon olive oil
1 teaspoon garlic powder
1.5 tablespoons A1 Sauce
3 tablespoons sliced butter
1/2 cup uncooked white rice
1.5 cups of water
1.5 cups shredded cheddar cheese
10 ounces can condensed tomato soup
Salt to taste

Instructions:

1. In a large slow cooker, layer the onions, potatoes, carrots, celery, and minced garlic.
2. In a skillet over medium heat, heat the olive oil. Add the lean ground beef and cook until browned. Sprinkle beef with salt, A1 sauce, and garlic powder. Mix well. Drain excess fat.
3. Add the seasoned beef on top of the layered vegetables in the slow cooker.
4. Sprinkle the sliced butter on top.
5. Spread the uncooked white rice over the mixture.
6. Pour the condensed tomato soup and water evenly over the ingredients.
7. Cover the slow cooker and cook on low for 6-8 hours (high for 4 hours) or until the vegetables are tender and the rice is cooked. Once cook time is up, sprinkle cheese on top. Turn slow cooker off and put lid on to wait until cheese melts.
