Chocolate mayonnaise cake



290 gr of flour

230 gr of sugar

2 tbsp. to coffee baking

60 gr of cocoa powder

230 gr of mayonnaise (without mustard)

290 ml of coffee (or 290 ml of water)

1 tbsp. vanilla extract

100 gr of chocolate chips

Ganache icing:

100 gr of chocolate

100 ml of cream (30% fat)


Combine all the dry ingreddients in a bowl: the flour, sugar, baking powder, and cocoa powder.

Combine all the wet ingreddients in another bowl: mayonnaise, coffee, and vanilla.

Incorporate the dry mixture intto the wet mixture in 3 batches, mixing well until a homogeneous paste is obtained.

Add the chocolate chips then mix. Pour the dough into a greasedd cake tin. Bake for 55 minutes at 180 ยฐ C. Check the doneness, then remove the cake from the oven and let it cool.

The ganache:

Heat the cream for 1 min 30 sec in the microwave. Pour the hot cream over the chocolate cut into small pieces. Mix well until you obtain a creamy ganache.

Pour the ganache over the cake and itโ€™s ready!
