4 boneless, skinless chicken souffles
1 package of ranch dressing mix
¾ Panko Cups Breadcrumbs
¾ Parmesan cups
½ Cups Fade-out of the smart spread scale
Or your choice of butter-based product
1 greased baking dish( or 2)
2 medium bowls
Supplies. In a medium bowl, mix the ranch packet, bread crumbs and parmesan cheese. Set aside.
Boneless, skinless chicken breasts.
Preheat oven to 350.
Clean and rinse chicken. Cut each piece in half lengthwise.
Use a paper towel to dry the chicken.
Melt Smart Balance Spread (or butter) in a medium microwaveable bowl.
Dip each piece of chicken in melted butter. Cover both sides.
Then press each side of the chicken into the breading mix.
Place in a greased pan. Do this for each piece. I covered my baking dish with aluminum foil that I sprayed with Pam to prevent the chicken from sticking. And to make cleaning easier!
I had a lot of mix left over, so I sprinkled the rest on top of the chicken. I also melted some more smart scale and sprinkled each piece with it.
Now lift the feet up (or clean up the mess you made) and let the chicken cook for 45 minutes. WARNING: the kitchen is starting to smell really good!!
The dish is finished! I was so excited to taste this best chicken ever that you can see where I cut a piece in the lower left corner!
