Ingredients:
For chicken :
2lbs boneless skinless chicken breast
1 green bell pepper
1 red bell pepper
Half brown onion
4 garlic cloves
1 package of fajita seasoning
1/3 cup water
1 teaspoon black pepper and any other seasonings/herbs you’d like.
For Rice:
1 cup jasmine or long grain rice
Pinch of Cumin seeds
1 tablespoon vegetable oil
2 cups filter water or chicken broth
Chopped onion🧅
2 garlic cloves 🧄
2 Roma tomatoes 🍅
2 tablespoons of chicken bouillon
Directions:
For chicken :
Brown chicken for about 3-5 minutes. Remove from pan. Add your sliced bell peppers and onions to sauté for 3-5 minutes. Add chicken back and mix. Add your packet of fajita seasoning mixed with 1/3 cup water. Add black pepper and chopped garlic. Feel free to add any other seasonings you would like such as chili powder, oregano, chili flakes, cumin etc. Simmer for 7-10 minutes. Done ✅
For Rice:
Add oil to pot. Then add rice and cumin seeds and lightly fry until rice turns white-light brown. I blend my tomatoes and garlic then add to a small pot to simmer which will thicken. Sauce will get deep rich red color. I simmer for about 7-10 minutes. Once my rice is all white, I add my chopped onions and mix around for a couple minutes until onions turn translucent. I then add my simmered tomatoe sauce and stir for a few seconds. Then add your 2 cups of water or chicken broth. Mix. Then I add 2 tablespoons of knorr chicken bouillon. Stir and taste. Bring to a boil and then turn all the way low and simmer for 20 minutes. I always use timer ⏲. Rice comes out perfect every time. I hope you like this 🤗
