Wooow, rich, creamy and flavorful seafood bisque!! This tasty combination of Crab meat, shrimp, Tomato paste…creates a flavorful dish to serve this time of year !! Belive it or not, it’s irresistibly decadent…my hubby can’t stop eating it !!
YOU’LL NEED :
– Butter: 3 tablespoons
– Green onion: 2 tablespoons (chopped)
– Celery: 2 tablespoons (chopped)
– All-purpose flour: 3 tablespoons
– Milk: 2 1/2 cups
– Freshly ground black pepper: 1/2 teaspoon
– Tomato paste: 1 tablespoon
– Heavy whipping cream: 1 cup
– Crab meat: 8 ounces
– Small cooked shrimp: 4 to 8 ounces (you can use other seafood too)
– Sherry win: 2 tablespoon
METHOD OF WORK :
1. In a Dutch oven or large saucepan over medium-low heat, melt the butter, then add the chopped green onion and celery and saute, stirring, until tender.
2. The next step is to blend the flour into the butter and vegetables until well incorporated. And please keep cooking and stirring for 2 minutes.
3. In another saucepan over medium heat, warm the milk.
4. Make sure to stir in the warmed milk slowly. Cook and stir constantly until thickened.
5. You’ll want to add the freshly ground black pepper, tomato paste, and heavy cream.
6. In the meantime, I always puree the soup in a blender or food processorand then return it to the saucepan (optional).
7. All that needs to be done now is to stir in together the crab, shrimp, and the sherry. Immediately bring to a simmer. Finally, serve hot & ENJOY !!!
#Tips & Variations:
* I prefer to add small cooked bay scallops or lobster instead of the shrimp.
* You’d best replace the green onions with finely chopped shallots.
* Most people garnish the soup with thinly sliced green onion tops, cilantro, or parsley, but I personnaly prefer to add a spoonful of sour cream and swirl it.
